Crunch And Munch

Part of getting my health back on track includes modifying the types of foods I eat (aka DIET). I am hoping that saying about better late than never also applies to me and the kind of food I eat. Last night I decided I wanted a Waldorf Salad. Of course, I’ve never made one, don’t have a recipe for one and actually haven’t eaten one in more than 20 years. So what to do? Besides look up recipes on the internet? Ask twitter. Ask and I shall receive. I got better than a Waldorf Salad recipe, I got a new, super secret, recipe guru. And I hear that back in 1989 Frank Sinatra tried this and loved it!

1 large red delicious apple and 1 Pear

25 baby carrots and 2 stalks celery

1/2 cup raisins and 1/2 cup cranberries

(note: there were no cranberries available so being the fantastic chef I am (not) I substituted grapes and cut them in half)

1 cup roasted Pistachios

2 tablespoons lemon or lime juice

1 tablespoon sugar

The result was a really amazing and tasty combination of flavors. I also loved how it looked when it was done: so many colors and textures! (If I sound like I have been watching too much Food Network? I have.)

Everyone loved it. Seriously, except for picking out the celery, EVEN MY HUSBAND ATE IT. And enjoyed it!

I still am going to try it with cranberries though!
